A rainy day combo at Fort Tryon Park – roses and clematis

I have decreed Thursday as a day for links. Why? Because Thursday is just waiting for the weekend, and my focus is already shot. Speaking of the weekend, I have no great plans. This is unusual and someone needs to suggest something immediately.

Unrelated, roast rhubarb with a bit of sweet orange juice and peel and brown sugar is pretty delicious. The addition of orange is inspired by Nigel Slater’s recipe in The Kitchen Diaries (he uses honey instead of sugar though).

Roasted Rhubarb

Pre-heat oven to 375. Cut your rhubarb into 1-2 inch pieces, toss in a cake pan with some brown sugar (I probably used about 1/2 c. for just under 2 cups of chopped rhubarb – enough so that it looked generous when sprinkled over the rhubarb) and orange juice/peel or vanilla bean if desired. Roast for 15-25 min. It’s done when bubbling and mashable. Eat plain, with yogurt or ice cream, in a trifle, on a biscuit, or baked into some kind of muffin. Multi-purpose, that roasted rhubarb is!

Note: I would have taken a picture except, let’s face it, cooked rhubarb is kind of unattractive and slimy. Even Nigel’s picture in The Kitchen Diaries is pretty sad looking. But its intense flavour more than makes up for any aesthetic shortcomings.
